Recipe: Caramel Pie

Recipe: Caramel Pie

This recipe was given to me years ago by a friend and it's still a firm favourite in our household and with guests. And yes, it's easy - it wouldn't be one of my favoured recipes if it wasn't :)





1 cup wholemeal flour

1/2 cup self raising flour

1/2 cup coconut

1 cup brown sugar

1 egg (quickly whisked before combining with other ingredients)

1 1/2 cups rolled oats

150gms melted butter



100gms butter

1 tin condensed milk

2T golden syrup







To prepare the base, mix all ingredients together. Place 2/3rds in a flan dish, pushing the mixture down. Set aside the remainder 1/3.



Melt all ingredients on a low heat. Be careful as it can quickly curdle and catch on the bottom of the pot. Once melted, add 1 tsp of vanilla essence. Pour filling over the base. Carefully sprinkle the remainder 1/3 base mixture over the caramel filling.


Bake in a moderate oven (180oC) for 15-20 minutes.

All ready to go in the oven - I'm such a domestic goddess!!



Serve at room temperature with whipped cream (do not add any sweetner to the cream, the dessert is sweet enough), and sprinkle with icing sugar for a finishing touch. It's also nice cold the following day.
