Asian Influenced Salmon

Asian Influenced Salmon

This is absolutely delicious and like any of the recipes we share, very easy. This is a great one to impress guests with. Apologies, creator of this fabulous recipe unknown.


Serves 4



2 tablespoons oil

1/2 teaspoon shrimp paste

2 tablespoons ginger, grated

2 lemon or kaffir lime leaves

2 tablespoons fish sauce

2 tablespoons brown sugar

fine zest of one lemon

1-2 tablespoons sweet chilli sauce

1 side of salmon (it may not sound much, but salmon is rich and you don't need much of it)

juice of 1 lemon



Sizzle the shrimp paste in the oil for one minute. Remove from the heat and add the remaining ingredients, apart from the lemon juice. Pour over the salmon and marinate for two hours.


Drain the marinade from the salmon and reserve. Pour the lemon juice over the salmon and grill (or BBQ) for 2–3 minutes skin side down, then one minute skin side up, until just cooked. Salmon doesn't need a lot of cooking.


Heat the reserved marinade and pour over the salmon to serve. Serve with plain sides of either vegetables (beans, asparagus, wilted greens) or salad. Great for lunch or dinner.
